I don’t know about all of you, but I usually get stuck with all of the leftovers from Thanksgiving. Let me tell you…I could feed a small village with all of the food left in my fridge. Splurging on Thanksgiving Day isn’t so bad, but when you are left with enough food to repeat Thanksgiving dinner for days, it can result in a serious excess of calories. Fortunately, there are a few ways that you can use and enjoy these leftover dishes without sacrificing your waistline! Here are some of my favorite ways to use the leftovers from my Thanksgiving dinner:

Turkey Sandwiches or Lettuce Wraps

Ingredients:
Lettuce or whole wheat bread
Leftover turkey, shredded
Cranberry sauce
Any other ingredients you like on a sandwich or in a wrap

Simply wrap your ingredients in lettuce or sandwich them between two slices of whole wheat bread to enjoy a fresh, delicious sandwich!

Turkey Soup

Ingredients:
Shredded or diced turkey
Chopped carrot
Chopped celery
Chopped onion
Chopped dill
Sea salt and pepper to taste
Vegetable broth

Directions:
1. Sauté carrot, celery, and onion in a soup pot
2. Once onions are softened, add seasonings and stir until fragrant
3. Add vegetable broth (1 cup per serving), and bring to a boil
4. Add cooked turkey meat and simmer until heated

One final piece of advice: go ahead and throw out the desserts and unhealthy casseroles. If you keep them, you’re more likely to continue to eat them. Tell us how you like to revamp your holiday leftovers!
