I have had such an adventure navigating through changing how I think of food, especially when it comes to veggies vs. meat.  I have enjoyed trying new recipes.  I have always wanted to put more effort in trying new things, and experiementing with a Vegetarian based diet sure gave me the motivation. I have discovered so many great reciepies from a number of different places.  What makes them the best is when my kids will eat them with a smile.

Since my inspiration came from “Forks Over Knives” I use their site and recipe book as a resource.  I have found wonderful recipes like Veggie Chilli, Potato Enchiladas, and Baked Stuffed Tomatoes with Couscous.  These have turned into staple recipes that I will double batch and eat through the week.  I never seem to get tired of them, and thank goodness, neither do my kids.

My kids are my true motivation.  I have a responsiblity to set the example of a healthy lifestyle of fitness, but also how to eat in a healthy way.  I want them to know that healthy eating is still enjoyable and delicious.  I think eating healthy has gotten a bad rap.  We assume is means restriction, bland, boring eating.  That is simple not true.  I actually feel so much better and enjoy my meals so much more knowing that they taste great and are fueling my body with nutrients, not things I will regret later.
