Best Granola Ever!
One of our sweeter than sweet clients, Kim Kresenberg, gave us the most delicious, crunchy granola for Christmas and was kind enough to share the recipe too. It was all I could do not to devour it in one sitting, that’s how yummy it was. You can have it for breakfast with milk, sprinkle it on your favorite yogurt or just enjoy a handful as a nutritious healthy snack. Give this a try and you’ll come back to it over and over again!
Preheat oven to 300
Combine 1 large beaten egg white
3 cups old fashion oats
1 ½ cups of chopped nuts (almonds, pumpkin seeds, and walnuts)
¼ cup of olive oil
¼ cup of sesame seeds
2 Tbps. of (packed) light brown sugar
1 ½ tsp. kosher salt
½ tsp. ground cinnamon
In a large bowl: toss to combine
Spread out on a rimmed baking sheet.
Bake granola, stirring every 10 minutes until golden brown and dry, 40-45 minutes.
Let cool on backing sheet.
Mix in 1 cup (total) dried cranberries, raisins, and dates
